Owners Emiliano Cecchetti and Mauro Bernocchi spent a long time researching and perfecting a way to create gelato that’s delicious, healthy, and light. The local, organic dairy from Straus Farms is treated with lactase to pre-digest the lactose. Natural sugars like Erythritol, maple syrup, and organic cane sugar are used in modest amounts. Seasonal organic fruits sourced from local farms enable rotating special delights throughout the year.
